Our slow-cooked beef shin lasagne is gloriously meaty. Whilst inspired by the Italian region of Emilia-Romagna, the home of the traditional beef bolognese, Roberta prefers beef stracotto here, where larger chunks of meat that are cooked until sumptuously tender - rather than the traditional mince of a bolognese sauce. We’ve simmered our beef shin with a carefully selected blend of aromatics to create a rich ragù which is then layered between soft sheets of lasagne and our velvety, nutmeg-infused béchamel. This northern masterpiece is one of Roberta’s favourites to make as it reminds her of childhood holidays spent in the beautiful, ancient city of Ravenna. The dish is best enjoyed alla rustica - in other words, we like it a little sloppy! The layers should blend together to create a wonderful medley of flavours so that with each mouthful you’re transported to the medieval streets and enchanting piazze of Emilia-Romagna.
